But we have pretty solid evidence that the universe is expanding at any rate.

Mainstream theory says the mas/enerjy of the Universe i finite, a it expand it come apart.
Second most popular (steady state) and very much out of fashion hypothesise that the universe is indeed in an infinite generation process with particles coming into existence in the void. Not so different to having dark energy in the void.

Remember matter can not be created or destroyed. The universe expands but it also contract to what we call a singularity. Heh, shadow and dust.
