having a heart valve replaced do we choose a pig valve or a mecanical valve

You need to have a discussion with your surgeon about that.

Ask what the pros and cons of each are, and what he/she recommends. Different valves are going to be more or less appropriate for different patients.

I agree with Pangolin. The decision of which valve to implant depends on several things including age and other medical conditions. Mechanical valves require life long anticoagulation (blood thinning meds) so they may not be appropriate for the elderly or those predisposed to easy bleeding.
